Spicy Sichuan aubergine
This spicy dish is a winter favourite bursting with heat and flavour and has a delicate savoury tang from the black rice vinegar
Spicy Sichuan aubergine

Preptime:10 minutes, cooking: 12 minutes

This spicy dish, also known as Yu Shiang Cie Tze, is bursting with heat and flavour and has a delicate savoury tang from the black rice vinegar. This is definitely a winter favourite.

serves 2-4 to share
groundnut oil for deep-frying

1 large aubergine, sliced lengthways into 2cm/æ inch wide x 4cm/1* inch long, chunky batons

2 garlic cloves, finely chopped

2.5cm/1 inch piece of fresh root ginger, peeled and finely chopped

1 medium red chilli, with seeds, sliced into rings

2 tablespoons chilli bean paste

200ml/7fl oz hot vegetable stock

1 tablespoon light soy sauce

1 tablespoon Chinkiang black rice vinegar or balsamic vinegar

2 pinches of brown sugar

1 tablespoon cornflour blended with 2 tablespoons cold water

1 spring onion, finely chopped

egg-fried rice to serve

1. Heat a wok over a high heat, then fill the wok to one-third of its depth with groundnut oil. Heat the oil to 180ºC/350º For until a cube of bread dropped in turns golden brown in 15 seconds and floats to the surface.

2. Pat the aubergine dry and, using tongs, lower each piece into the oil and deep-fry for 3 minutes until slightly golden, the skin slightly wrinkled and the flesh soft but still retaining its shape. Remove from the oil and drain on absorbent kitchen paper.

3. Pour the oil from the wok through a sieve into a heatproof container (you can use it to make delicious stir-fries). Return 1 tablespoon oil to the wok and heat until smoking, then add the garlic, ginger and sliced chilli and stir-fry quickly for a few seconds. Stir in the chilli bean paste and return the aubergines to the wok. Add the hot stock and bring to the boil, then turn the heat down to medium and simmer for 3 minutes until all the aubergine is soft and creamy.

4. Season with the soy sauce, vinegar and sugar, then add the blended cornflour and stir to thicken the sauce. Sprinkle with the spring onion for a fresh bite and serve immediately with egg-fried rice.

I love Chinese food, but I want to find some healthy dishes when I go out, are there any good healthy choices?

I love all Chinese food. Something healthy would be nice.
Keep in mind, I don’t have a real nice place near me. It is one of those walk in places. You know, they all have the same pictures on the wall.

Without knowing what particular dishes your chinese place serves its a bit tricky…

Stay away from anything with fried or battered. So fried rice and honey chicken are out (my favourites). Try and choose something with lots of vegies in it and as far a sauces go something that is not really sweet and syrupy…cooked in a stock or oyster sauce rather than a sweet and sour sauce.

So what is considered a chinese restaurant? From a Modern Asian Restaurant, a Thai, a Viet., Japanese restaur

There’s a chinese takeout restaurant with a execlusive "No other Chinese restaurant within the same shopping center". But what is considered a Chinese Restaurant? Must be chinese to cook? Must have chinese writings? What is legally a chinese restaurant?

A Chinese restaurant is a restaurant that serves dishes that are based or found in China.

However, you don’t have to be Chinese to cook in a Chinese restaurant. Many Latino cooks can be found is some Chinese restaurants, especially along the US-Mexico border.

Locally, some Chinese restaurants are owned by Vietnamese while the Chinese own Japanese restaurants.

Best Thai and Chinese cuisine in DC area?

I am visiting friends in downtown DC and the Fairfax County, VA area over the weekend and would like suggestions on the best Thai restaurant (sit down or take out) and Chinese restaurant (sit down only). Hong Kong style Chinese preferred but not mandatory… good dim sum a plus! Thanks!

For downtown DC (Chinatown), Tony Cheng’s has a popular dim sum – 621 H Street NW (upstairs). In Virginia, Fortune – 6249 Arlington Blvd Falls Church, VA 22044.

Thai restaurants are plentiful (and of an overall consistent quality) throughout the District, but IMHO the better fare is out in the Maryland and Virginia suburbs. Rice on 14th Street NW provides an interesting contemporary spin on the cuisine. When we’re up to travel to Virginia, we’ll head to Po Siam in Alexandria.

If you’re open to traveling a bit outside the District, a truly excellent Burmese restaurant is Mandalay in Silver Spring, Maryland – one of our favorite dining experiences. Worth the drive!

Americans know all about snacks, or eating between meals, but they’re more likely to snack on a chicken leg, or drum stick, than, say, the chicken’s gizzard! Did you know in many Asian cultures, dog and cat meat is no different than chicken or pig meat. Meat is meat. As many Asians were raised on dog and cat meat, they think what’s the big deal.

I’m about to write to the state about my suspicious that some Chinese restaurants really ARE serving cat and dog meat because I am hearing a lot of people say “the meat doesn’t look quite like chicken or beef. I remember back in the early 1980′s there were a few Chinese restaurants that had cats in the freezer albeit they denied feeding it to the customers. Yeah, right.

Since most people oppose spay/neuter legislation the unwanted and homeless cat and dog population is every growing so instead of legislating spay/neutering, multiple “free to good home” ads, and trapping stray cats, are perfect sources of “chicken and beef” sources with 100% profit-they can kill the dogs and cats in their home, chop them up, take the cut up meat to their restaurant, and serve them as beef and chicken dishes and nobody would know the difference. THE ECONOMY IS BAD-SO IT WOULD NOT SURPRISE ME

RESTAURANTS ARE GETTING MORE CLEVER AND JUST SNEAK THE DOG AND CAT MEAT IN RATHER THAN KILLING THE ANIMALS IN THE RESTAURANT

I think the state should randomly investigate by taking samples of food-discreetly-and get them lab tested especially if it doesn’t quite look like chicken or beef.

IT’S DOG MEAT!!

We here in Canada and the US. call food from japan, and china and there "chinese food" so what do the chinese call our food? Canadain food? that sounds kinda weird.

I need to know some chinese restaurant in Las Vegas to host wedding reception?

What is chinese traditional restaurant in Las Vegas that has space for wedding dinner? Probably around 100 invitees. I am planning to have wedding dinner there but I don’t live there so I need some suggestions,

here are four places to try.

P F Chang’s….for a chain restaurant, the is place gets very good reviews. they actually have two locations in las vegas, so they are very popular. http://www.pfchangs.com/index.aspx
